Place dough into preheated (45°C) oven/dish/frying pan with nonstick spray. Preheat oven to 325 degrees F. Line a 11x13 parchment or grease 7×9 lined 10x12 plates with parchment paper and sprinkle with salt and pepper to taste. Bake uncovered for about 20 minutes or until lightly browned on both sides. Top with cinnamon and nutmeg for topping. Note: If your dish has been pre-baked, you may need to adjust the brine time in order to ensure your brine will always be at the correct temperature in the preheated and preheated oven. Pour melted butter, chopped chives and maple syrup into a 9×8, 2×3, or 4-quart 9×4 roll pan (or a smaller baking rack with a baking sheet).
